Join chef and food stylist Olivia Cavalli to learn how to make some of Italy’s most popular picnic treats for outdoor dining.

About this event

From a traditional Torta and farro salad, to sweet and crunchy taralli, Olivia will demonstrate the art of using simple ingredients and repurposing leftovers, emphasising the importance of a home-cooked meal. Through her step-by-step guide on each recipe, you will come away with the perfect accompaniments for your next picnic.

20% of the ticket price will be donated to Crafts Council UK.

All you need to take part is computer with a webcam and microphone. We suggest using a laptop or desktop computer, but you can also use your tablet or mobile phone. We recommend using a WiFi connection to avoid data charges.

Please note our virtual workshops are live events and recordings will not be available to view at a later date.

Cooking Equipment:

  • A deep 9 inch springform cake tin for the tart
  • Mixing bowls
  • Baking trays
  • Pots and pans
  • Greaseproof paper
  • Aluminium foil
  • Spoons, forks etc.

Ingredients for the Torta:

  • Approx. 550g spinach
  • 500g ricotta
  • 160g Parmesan or a combination of Parmesan and pecorino
  • 2 medium eggs
  • Nutmeg (optional)
  • 2 sheets puff pastry, approx. 200g each
  • Butter
  • Optional additions: 4 more eggs/150g cooked peas/2 handfuls marinated artichokes

Ingredients for Taralli:

  • 60ml red wine
  • 60ml mild olive oil or sunflower oil
  • 50g caster sugar
  • 1 tsp aniseed or fennel seeds (optional)
  • 1/2 tsp baking powder or soda
  • 165g plain flour
  • 25g demerara sugar (or more caster sugar)

Ingredients for the Farro Salad:

  • Extra virgin olive oil
  • Balsamic vinegar
  • 200g cherry tomatoes
  • 2 medium red onions
  • 200g farro (substitutes: spelt grain / pearl barley)
  • Approx. 160g buffalo mozzarella or ricotta OR 50g Parmesan or pecorino
  • Approx. 100g rocket
  • Basil or parsley
  • Large handful pine nuts
  • Flakey salt
  • 1 lemon

Olivia is a freelance cook, food stylist, writer and photographer with a keen interest in Italian food culture. She learnt how to make pasta from her Italian grandmother who has taught her the art of using simple ingredients, repurposing leftovers and the importance of a home-cooked meal. She has worked in Italian and London based restaurants making pasta and a range of other dishes. Italy provides an endless source of inspiration for Olivia and she is passionate about sharing her love of Italian cuisine with others.
