About This Event: Venison Butchery Course

Discover the art of venison butchery in this hands-on, small-group course held at Westerham Hall, Westerham. Running from 10:00 AM to 4:00 PM, this immersive experience is perfect for all skill levels and limited to just 8 participants, ensuring personalized guidance throughout the day. The course is open to anybody from 12 years old, however anybody under 18 must be accompanied by an adult.

You’ll begin with a skinned venison carcass, learning how to break it down into primals before delving deeper into the specific cuts. Understand where each cut comes from, its characteristics, and how best to prepare it for cooking. Alongside your butchery skills, you’ll learn to craft your own venison sausages and gain valuable tips for cooking venison to perfection.

The day also includes a delicious venison-based lunch and tea and coffee served throughout, keeping you fueled for this rewarding experience. Best of all, you’ll take home one-eighth of a deer—perfect for showcasing your new skills to family and friends.
