Liquid Intellect will be joining us to serve a tasting menu inspired by memories of their experiences at Last Chance and their journey as bartenders.

"Nottingham is where our journey began, so it’s only fitting that we take everything we’ve learnt from London and we bring it back to one of our favourite venues.

12 courses of drinks, snacks and experiences accompanied by good vibes and nostalgic beats.

Expect, doc martins, East London attitude and banging drinks... and a lot of whisky..."

* A bit of an idea of what to expect
Werthers bubbles on arrival -drink, werthers originals fermented into wine, with a drop of Auchentoshan Three Wood added.
Laying uncomfortable foundations -hand cream flavoured with ingredients from the drinks to come, and applied by the person sitting next to you, in order to break down social barriers. -Served in small soap dispensers
Avacado white chocolate yuzu -drink, avocado & white chocolate sour style drink with Zacapa fat washed with caramelised white chocolate, avocado blended into milk, and split into ricotta and whey then made into a syrup, then with yuzu juice for sourness.
Pickled rhubarb heads and sour custard -snack, pickled rhubarb leaves and custard keffir. Kind of like ‘fermented custard’ really tasty and interesting. Served as sharing style, with the heads of the rhubarb dehydrated into crisp style.
Banana black currant leaf and sea purslane -drink, bananas fermented into an aromatised wine style liquid, blended with Tanquery 10 & black currant leaf tincture and sea purslane. Drink described as light-tropical, and salty, takes you perfectly from the last snack to the next one. Good bridge between sweet and savoury.
Sourdough and miso hummus -snack, home baked sour dough, with cultured yeast. Miso leftovers from the rotovap are then mixed with oil, macadamia nuts, salt.
Tabacco leaf leather and fig caramel -drink, Tabacco leaf infused into Cardhu, leather tincture made from various essential oils and under ripened foraged figs blended with caramel for that fresher green note.
Salted pork cigar ash and smoked apple -snack, pork slow cooked in rock salt for 72 hours, pulled, and set in circular moulds. Rolled in pearl barley, fried, then coated in cigar & apple ash. Served with a smoked apple puree.
Miso koji treacle blackwalnut -drink, Ron Zacapa,
Don’t pic but mix -snack, all of the flavours experienced throughout the evening will be put into individual ‘sweets’ or ‘chocolates’ and served in a pic and mix bag either to take away or consume on the evening.
