4 cities have influenced me most in my career.
Berlin, Porto, Bordeaux and San Francisco.
My cuisine is inspired by this journey, through which I have created a drink and a snack for each city.
The tasting will be 4 courses. Each of them is my interpretation of dishes I learned from Michelin chefs, friends and my family in these cities.
They are as passionate as I am about the quest for creative, connected and inspiring food. Standing in a kitchen with a big brigade of 30 chefs is as fascinating as learning to shuck oyster in the bay of Arcachon.
My family gave me the love of cooking, the kitchens taught me to be professional and my journey's showed me the world.
Now it's about sharing these moments with you.
We try to express our food using local suppliers.
