Chef Paul will teach you how to cook a simply delicious, sichuan style seabass with vegetables with lots of tips and tricks along the way.

About this Event

Class Details:-

Thursday March 11th - 7:00 PM - 8:00 PM

After you have purchased your tickets, you will receive a confirmation email and nearer the date of the event we will email you a link to the Zoom online meeting session we will use.

At the beginning of the cooking class, we will introduce the chef Paul and start with some general information and look into some of the key points throughout the class;

1. How to choose clean and fillet a fish

2. Knife Skills – pinch, grip, lock and rock technique – sharpening, looking after your knives and storage

3. The correct knife to use for the job and why

4. Pan frying – differences between coated, uncoated, cast iron, stainless steel

5. Planning ahead – making life easier in the kitchen

6. Serving and presentation

7. Lots of hints and tips along the way

8. Plenty of time for questions and answers as we cook together

Ingredients:-

For the Sichuan-style sea bass

• 1 tbsp vegetable oil

• 2 garlic cloves, peeled, finely diced

• 2 tbsp chopped fresh ginger

• 2 chillies, finely chopped

• 4 spring onions, finely chopped

• 2 tbsp chilli-bean paste

• 2 tbsp soy sauce

• 2 tbsp rice wine vinegar

• 110ml/4fl oz chicken stock

• 1 tbsp sesame oil

• 4 x 350g/13oz sea bass fillets, cleaned, gutted, skin scored 3 times with a sharp knife (Chef Paul will talk through this within the class)

For the wok-fried vegetables

• 2 tbsp vegetable oil

• 4 spring onions, finely sliced

• 150g/4oz mangetout, finely sliced

• 4 heads bok choi, root removed, leaves separated

• 3 tbsp water

• 2 tbsp soy sauce

• 1 tbsp sesame oil

Equipment:-

•Filleting knife

•Chef’s Knife

•Paring knife

•Cutting board

•Frying pan – coated, uncoated or cast iron

•Wok

•Gadgets – silicone if possible

•Salt and Pepper mills

•Bowls, dishes and serving plates

•Flatware

•Glasses

•Stainless steel soap (not a necessity)
