Barney Wrobel - As a chef I approach creating menus with taste and seasonality in mind. I also like my guests to come away feeling nutritionally boosted using the power of fermentation and other healthy processes. Driven by a fervent interest in flavour and fresh produce, I am technically self trained and have amassed fifteen years of experience working with many great chefs at Le Manoir aux Quat's Saisons, Soho Farmhouse, Recipease to name a few.
