Chef Mauro

Mauro De Luca is a chef hailing from Florence in Italy. He runs a vegan restaurant together with his Korean wife in London. His focus is the intermarriage of cultures, bringing together people through the medium of food. Through his wife, Mauro has become fascinated with healing probiotic food, especially Kimchi that features heavily in many dishes.

Mauro even went on to create his own versions of Kimchi that include mild flavours such as Green, Yellow and Purple made from different cabbages and ingredients like rosemary and spirulina.

Mauro's cookbooks aim to introduce people to healthy cooking, to benefit from probiotic foods and to heal their gut health.
