Pastificio Mansi

A small pasta workshop based in Dulwich.

Founder and jewellery designer Emanuela Mansi’s eye for shapes drew her to train as a sfoglina and then set up Pastificio Mansi in London in 2012.

“For me it’s about the beauty of the shape,” she says. “I shape every single piece by hand. You really have to love what you’re doing, otherwise you’d go mad.”

During the week her team produce and supply fresh pasta to delis and over the weekend is running markets all over London.

Mansi, who adds new shapes to the pastificio repertoire all the time, makes fresh pasta from all over Italy, including orecchiette (“small ears”) and strozzapreti (“the priest choker”).
