This course will explore the different elements of curating flavour combinations and textures to build exciting plates.We will look at different processes and cooking bases to fuel ideas and inspiration and encourage experimentation. It hopes to challenge you to move you away from set recipes and into intuitive cooking and play; a different kind of cooking course.Mainstream vegan food can often be bland (or solely health focused). At this event we will work with how to build layers of tastes that are full of surprises and pleasure. Covering:Nut and plant cheese (and cream sauce bases)Pestos (including sun-dried tomato, sage and walnut pesto)Rich and deep sauces (including greek and mexican influences)Simple ways to flavour and prepare vegetables (and fresh herbs) We will learn about different ways to prepare and cook food and then eat a shared feast from all the different dishes we have prepared. Course level: This course is suitable for any lover of food and all level of skill and knowledge (including passionate home cooks , chefs and professionals looking for new inspiration and those with little or no experience in cooking) About BB’s Kitchen:Chef BB loves to play, cooking inspired by flavours offered by the different landscapes around her. Wild foraging unique plants, exploring traditional preserving processes from different cultures, sun pickling, fermentation, sun drying, brewing and playing with different cooking methods are all part of her practice. Her mission is to challenge the boundaries of how we view, understand and experience food.Years running an award winning retreat kitchen in rural Crete and cooking in Mexican kitchens are her among her biggest influences.
