Petroc has designed a series of one-day workshops to support businesses in Torridge and North Devon with their culinary skills.

Do you have a member of kitchen staff who would benefit from learning new skills? Are you looking for new dishes to add to your menu?*We have designed a series of one-day workshops that have been tailored to enhance their culinary skills in areas such as:<h3>Vegetarian &amp; Vegetables - Monday 6th February 2023, 9am - 4pm</h3>In this full day session, you will be making the following dishes:-Wild Mushroom Stroganoff-Quorn Thai Green Curry-Tofu Katsu-Quorn &amp; Papaya Salad-Pan-Fried Sesame &amp; Garlic Tofu-Courgette &amp; Mozzerella TartSales have now ended for this session<h3>Bread – British - Monday 20th February 2023, 9am - 4pm</h3>In this full day session, you will be making the following:-Bloomer-Crumpets-Devonshire Splits-English Muffins-Granary Cob-Yorkshire TeacakesThis event has sold out<h3>Bread – Rest of the World - Monday 27th February 2023, 9am - 4pm</h3>In this full day session, you will be making the following:-Brioche-Croissants-Doughnuts-Focaccia-Naan-Pizza-PretzelsThis event has sold out<h3>Pastry &amp; Cakes - Monday 6th March 2023, 9am - 4pm</h3>In this full day session, you will be making the following dishes:-Choux Pastry - Chocolate Eclairs &amp; Gateau Paris-Brest-Sweet Pastry - Lemon Meringue Pie-Rough Puff Pastry - Peach Tartlets, Blueberry Galettes, Chocolate &amp; Hazelnut Twists &amp; Palmiers-Rich Fruit Cake/Loaf-Lemon Drizzle CakeThis event has sold out<h3>Fish &amp; Shellfish - Monday 13th March 2023, 9am - 4pm</h3>In this full day session, you will be making the following dishes:-Asian inspired paupiette of plaice with ginger and spring onion-Canoe of mackerel with a salmon mousse- Grilled troncon of brill, caper and lemon beurre noisette- Portuguese fish stew- Prawn tortellini - fennel puree and white wine sauce- Scallops with caramelised cauliflower and a caper-raisin emulsionThis event has sold out<h3>Meat &amp; Poultry - Monday 20th March 2023, 9am - 4pm</h3>In this session, you will be learning how to cook:-Chicken Breast filled with a Prawn Mousse and accompanied by a Brown Shrimp &amp; Prosecco Cream-Pork Schnitzel-Poulet saute a la Paysanne Provencale-Raised Pork PieS﻿ales for this event will end on 6th March 2023. LIMITED SPACES STILL AVAILIBLE! These sessions are being delivered by the ‘Big Benefits for Small Businesses’ project and are fully funded by the European Social Fund.*Please note due to popular demand your registration on this course will be approved by the Big Benefits project team. You must have a business, or work for a business based in Torridge and North Devon to be eligible for support.
