Step into the world of wild lactic acid fermentation with Raw Vegan Chef & Hippocrates Wellness Lifestyle Medicine Coach & Ambassador, to discover the ancient art of preserving vegetables to enhance both flavour and health. This masterclass will give you an in-depth understanding of fermentation, and the specific process of wild lactic fermentation, while emphasising the profound health benefits these foods offer for your gut, mental, and physical well-being.Fermented foods are packed with probiotics that nourish your microbiome, the community of bacteria and microorganisms in your digestive system. A healthy microbiome plays a key role in mental health, affecting mood, weight management, cognition, and stress levels, while also supporting physical health, including immune function, digestion, and inflammation control. Throughout the class, we’ll highlight the essential connection between a thriving microbiome and overall health, and how incorporating fermented foods into your diet can make a pivotal difference.Upon arrival, you’ll be greeted with a refreshing fermented drink and tasty snacks to help you settle in and connect with other participants. Tea and coffee will be available throughout the class.Throughout the course, we’ll blend theory with hands-on practise. You’ll not only learn about the science behind fermentation, but you’ll also apply that knowledge to create three distinct and delicious ferments. We’ll begin with a simple and adaptable sauerkraut, perfect for beginners and a great starting point for understanding the process. From there, we’ll dive into the spicy world of kimchi, a versatile and bold-tasting fermented dish. We’ll finish with preserved lemon and turmeric pickle, which will add a zesty, aromatic touch to your fermented repertoire. At the end of the masterclass, you'll walk away with three jars of your own ferments—ready to continue their transformation at home. Along with your jars, you'll gain practical skills and insights to confidently create ferments in your own kitchen. I will guide you with simple, easy-to-follow instructions and share tips on how to adjust the process to suit your environment and taste preferences. This workshop is all about building your fermentation confidence learning to trust your senses, experiment with flavours, and develop your unique fermentation style.

Course Highlights:

  • Hands-on learning: Make three different types of lactic ferments—sauerkraut, kimchi, and preserved lemon and turmeric pickle.
  • Fermentation intuition: Learn to listen to your senses and develop an instinct for when your ferments are at their best.
  • The microbiome connection: Understand the crucial role of your microbiome in supporting both mental and physical health.
  • Recipe & information pack: Take home detailed instructions, alternative recipes, and tips for maintaining your ferments at home and ideas on how you can use your creations in many different dishes.
  • Tasting: Enjoy a selection of delicious ferments along with Lynn's signature fermented flax crackers and cultured cashew cheese during the class to inspire and fuel your creative process.

What to Bring:

To keep costs down and to encourage sustainability, please bring 3 glass jars (300–500ml) with flip-top or screw lids. Any type of jar that can comfortably hold your ferments will work. Medium-sized jars (around 300-400g) are ideal, but feel free to bring slightly larger ones if that suits your needs. These jars will be useful not only during the workshop but also for your future fermenting adventures at home. It's better to have a jar that's a bit larger than too small, so choose what fits your lifestyle!
