There’s something quietly magical about fermentation. For thousands of years, people have transformed simple ingredients like cabbage into vibrant, living foods full of flavour and character. Naturally rich in beneficial bacteria, these foods can support gut health, digestion and overall wellbeing – offering a simple, time-tested way to nourish your body. 

In this workshop, you’ll learn how to safely and confidently make your own ferments, from sauerkraut and kimchi to pickles and drinks. You’ll explore the history and science behind the process and leave with the skills to create delicious, living foods at home.

Workshop Highlights:

  • Explore the history of fermentation, its benefits, and how to ferment safely
  • Learn how to make sauerkraut, kimchi and fermented pickles 
  • Discover fermented drinks and fruit ferments
  • Understand the difference between dry and brine fermentation

Speaker Bio:

Åsa Linéa Simonsson is a Nurse, Nutritional Therapist and a Natural Chef. She is also the author of the book ‘Fermentation’ – awarded Best Fermentation book UK in the Gourmand World Cookbook Awards. Åsa specialises in Gut health and is passionate about  fermentation. She will teach you not just how to ferment, but also the incredible health benefits of regularly eating fermented foods. Åsa sees clients in person in London as well as online. She also lectures at the London College of Naturopathic Medicine as well as running retreats, workshops and courses.
