Overview

Join us for an introduction to fermenting and fermented food, with our friend Maz.

One of humanity's oldest forms of food magic - fermentation turns simple ingredients into bold, tangy delights, packed with flavour and gut-loving goodness. Once you understand the basics, a whole world of bubbling, transformational possibilities opens up in your own kitchen!

Maz grew up in Belgium, surrounded by all the foods of Europe.

With a keen gastronome as a father, and a Cordon Bleu cook for a mother, there was little doubt that she was going to grow up a committed cook! She now runs The Cottage Bed & Breakfast, here in Polperro.

Maz will provide an introduction to fermenting, focussing on the benefits of fermented food, and there'll be plenty of opportunity for further discussion on the subject during this 3 hour workshop.

You'll participate in hands on making - working at your own preparation station to create delicious sauerkraut, kimchi and kefir. If possible, we will also attempt some brined veg, using plants foraged directly from Polcoombe.

Please do ensure you let us know any dietary requirements in advance - kefir is dairy based.

In between making, Maz will serve some of her famous, home baked sourdough with tasters of each type of ferment that has been prepared in advance. She'll provide serving suggestions and some ideas for ways to incorporate your ferments into cooking and baking.

With a limited number of eight places available, you'll want to book fast to avoid disappointment.

What’s not included?

We only have a limited number of some items. Therefore, we encourage everyone to bring the following (where possible):

  • Jars (each attendee will need to bring three clean jars)
  • Kitchen knife & chopping board
