Demonstrating tasty plant-based recipes to inspire you!Online via zoom (recorded)<h2>Vegan mac n' cheese - Recipe</h2><ol><li>Cook the pasta (usually use penne) until nearly cooked (still firm). Drain.</li><li>Turn on the oven* (180 degrees)</li><li>Fry one onion, two cloves of garlic, one chilli (and mushrooms if you like) until soft</li><li>Mix in the sauce ingredients:</li></ol>- Tub of oatly creme freche- Tub of vegan cream cheese- Several dollops of veganaise- Large teaspoon wholegrain mustard- Four dessert spoons nutritional yeast- Squirt of agave syrup- Few glugs of white wine- Bit of sherry vinegar (or any nice vinegar)- Bit of balsamic vinegar - (If you’ve got some cooking sake, few glugs of that, too, why not?)- Season with salt and pepper5. Put the sauce and some frozen peas into a large oven dish6. Stir in the pasta7. Scatter breadcrumbs over the top8. Bake in the oven for 15-20 minutesAbout Clive Bradley"I’ve been vegetarian since 2010 - though not vegan. But my partner’s been vegan for four years now. So most of what I cook and eat at home is vegan. I love cooking, and I love inventing stuff. This is a recipe I made up - though it was inspired, I think, by a recipe I read for vegan cheese sauce. I hope this shows how tasty and interesting vegan food can be. It’s not a traditional Mac n cheese, obviously (it’s a runnier sauce, with garlic and chilli, and added veg).
