As we head into autumn and winter, mastering the hearty miso soup is a must for nourishing our health. This is not the kind of miso soup you get as a complimentary starter at your local Japanese restaurant... but rather a hearty home-made one-pot dish that's earthy, and nourishing. It is abundant with rich toppings that make you feel like you have a different flavour in each mouthful. You will learn the basic components of the miso soup so you can quickly and easily make your own at home and no longer reach for the instant-miso packet, even when time is pressed!

You will prepare a rich miso soup with assorted vegetable and protein toppings, with optional fish and seaweed elements to garnish the dish. Come learn some tips behind an umami-packed soup that will keep the doctor at bay!


What you will learn in class.

  • The basics of a rich Japanese broth.
  • How to blend different types of miso to create different umami flavours.
  • How to cut and prepare vegetables according for richer or more delicate flavours.


About Monday Night Cooking

All our Monday Night Cooking classes are taught in a relaxed and fun environment, from our culinary school kitchen near Finsbury Park - just a stone’s throw from Seven Sisters Road. We want people to get into the kitchen, learn some tips & techniques, and experience the magic of whole food cooking at home. At the Concord School of Culinary Arts, we believe we are what we eat and that good culinary skills can make a big difference in our well-being and lives.

About the Teacher.


Paul has been cooking with Concord School of Culinary Arts for over 10 years. He caters for events, teaches some classes and supports the Cascades wholefoods store (www.cascadesculinary.com) which sells the wholefood ingredients and cookware used in our teaching kitchen. Paul grew up with a wide range of global cuisines and enjoys bringing appropriate flavours together to offer rich, delicious dishes that nourish and inspire. Food has made a big difference in his life and he is passionate to share these experiences.

We have limited parking at our premises, you can park at the local Morrisons, or at the Sobell centre leisure centre.
