Cheesemaking workshop

About this Event

You’ll be guided through the basics of the background science and technical theory of how to make cheeses from an Italian cheese maker, and then experience hands-on cheese-making of two distinctly different Italian soft cheeses.

We will teach you a bit of the science of cheese making but mainly it is a fun practical day. We will provide all the equipment, milk and starters for your experience and you’ll get to take home the cheese you made and a kit with rennet and mould so you can develop your own cheese at your home.

The subjects covered include: milk composition; use of rennet; selecting and using ripening cultures and starter bacteria; setting the curd; cutting, draining and stirring the curd; moulding, milling and pressing the curd; and cheese ageing.

You will make two types of Italian soft cheese: Stracchino and Tosella and you will have some theoretical basics about hard cheese and ageing.

The course runs from 10.00 am – 3.30 pm, with lunch included.

Each course is for up to 12 participants, with each participant using separate cheese vats and moulding equipment to ensure everyone gets a full experience. Please wear robust closed in shoes and no jewellery and can I ask no strong perfume as the scent molecules can taint cheese.
