Michael began his training as an inspired 17-year old, at Bournemouth and Poole College. He then furthered his training at the renowned cookery school 'Le Notre' in Plastir, France, where his passion for Sugarcraft, Boulangerie, Chocolate and Pattiserre flourished. Over the following 13 years, he worked in many Hotels and Restaurants to further expand his knowledge and expertise including; Sheraton Park Towers, The Grosvenor House, The Berkeley Hotel, The Lanesborough Hotel and The Ivy Restaurant. In 1994 – Michael was the Head Pastry Lecturer at Le Cordon Bleu, London – where he taught students The Patisserie Diploma.Michael was delighted to be asked to design a 10 year commemorative Silver Jubilee replica cake for the Her Majesty The Queen and HRH The Prince Philip, Duke of Edinburgh.Michael was then approached to be part of a team to open a teaching school in Taiwan, The Renaissance School Of Culinary Arts so in 1996 he moved, with his wife and two very young children to Taiwan, where they lived until returning to England in 2000. When returning to England he worked in Mosimann's, London –as Executive Pastry Chef until 2002.Michael then ventured into the developmental side of the industry and found himself working, for a huge development food company, for 11 years, where his development concepts won numerous food awards.In 2012 Michael openedLe Petit Prince PatisserieIn Westbourne, an artisan authentic Bakery/Patisserie, where everything is individually hand -made using fresh, local quality ingredients. After the success in Westbourne, Michael opened a second patisserie in Wimborne.

In this class you will learn the following stages involved:

How to make two different fillings (salted caramel and raspberry and vanilla)

Filling and decorating the macaron shells

The word Macaron itself is derived from the Italian word, maccherone, meaning light dough. It is believed the original macaron was brought from Italy to France by Catherine di Medini who married Henri 11 in 1533
Today Macarons, are seen in all the fashionable Patisseries, in a wide variety of colours and flavours.
Equipment needed: Kitchen aid with a whisk attachment, rubber spatula, disposable piping bag, plain nozzle, silicone mat for baking.

Here is how the online class will work:

1. Purchase one ticket through Eventbrite.
2. Check your email! You should have received an email from Eventbrite. 
3. In the email, you will be able to view the ingredients you will need to prepare for the class if you would like to do it LIVE with me.
4. Approximately 20 mins before the class is scheduled to go live, you will receive a link via email to watch the class on <A HREF="https://zoom.us" TARGET="_blank" DATA-MSYS-CLICKTRACK="0" REL="nofollow noopener noreferrer">zoom</A>. Make sure you are in your kitchen, you have the ingredients ready and click the link at the scheduled time of the class so you don't miss the beginning.
If you can't join us live, don't worry! After you purchase your ticket, you can email us and after the live event, we will be able to send you a link to the recording.

The class is online and suitable for people aged 16 or over. For children under the age of 16, you will need adult permission and supervision.
