Coffee Basics: From Bean to Cup
In this section, learners are introduced to what coffee actually is and where it comes from. You’ll explain the difference between beans, outline basic roast levels, and discuss how freshness and grind size affect flavour.
Espresso Machine & Grinder Fundamentals
This session focuses on getting familiar with the equipment. We will walk learners through the parts of the espresso machine and grinder, explain what each component does, and demonstrate safe operation. Learners will practice grinding coffee, dosing correctly, and tamping evenly, building confidence before pulling shots.
Espresso Extraction & Shot Quality
Here, learners are taught how to pull a proper espresso shot using a simple recipe. You’ll explain timing, ratios, and what good extraction looks like, as well as common issues such as sour or bitter shots. Each learner will pull multiple shots, make adjustments, and taste the results to understand consistency and troubleshooting.
Milk Steaming & Texturing
This section covers the fundamentals of milk steaming, including milk types, temperature control, and creating smooth microfoam. We will demonstrate correct steam wand use, milk stretching, and texturing techniques. Learners then practice steaming milk repeatedly, focusing on achieving a glossy texture with no large bubbles.
Making Core Café Drinks
Learners apply their espresso and milk skills to making popular café drinks such as espresso, Americano, cappuccino, latte, flat white, and hot chocolate. We will explain cup sizes, milk-to-coffee ratios, and drink builds. Each learner prepares full drinks from start to finish, with emphasis on cleanliness and efficiency.
Workflow, Cleaning & Café Standards
This session highlights how a barista works efficiently during busy periods. We will cover cleaning as you go, proper use of cloths, and end-of-day cleaning routines for machines and grinders. Basic customer service standards are also discussed, reinforcing professional café habits.
Final Practical & Confidence Session
In the final session, learners demonstrate what they’ve learned by dialing in a shot, making drinks of their choice, and cleaning their workstation correctly. Feedback is given in a relaxed, supportive way, focusing on real-world café readiness and building confidence behind the bar.
