Join us in The Lacy Nook for a hands-on 2.5-hour sourdough workshop led by professional baker Maddie, designed to give you the confidence and tools to start baking sourdough bread at home. Together, we’ll mix one loaf and perform some stretch and folds to start building strength in the dough, you’ll also shape a second, pre-mixed dough and take both of these home to finish and bake. We’ll head into the Wood Street Plot to Plate Edible Garden to pick fresh herbs for topping focaccia, which we’ll bake and enjoy together with a spread of nibbles and a glass of wine or non-alcoholic alternative.
You’ll leave with two sourdough loaves ready for home baking, a proofing basket, dough scraper, and a step-by-step guide to keep your sourdough journey going.
Perfect for beginners or anyone looking to deepen their love of naturally leavened bread. Bring an apron if you wish and the following:
- A glass jar with lid to take your sourdough starter home
- A tea towel to line the proving basket
- A large Tupperware or similar plastic container to take your second dough home in
Maddie is a passionate baker and pâtisserie chef currently working at Beaten by a Whisker, a beloved local bakery known for its inventive plant-based bakes. After training at the School of Artisan Food last summer, she’s continued to develop her understanding of naturally leavened breads and refined her patisserie skills through creating new savoury and sweet specials which showcase the best seasonal ingredients.
Alongside her bakery work, Maddie curates wine and small plate evenings across Walthamstow—an outlet to express creativity and bringing people together outside the bakery. Expect her class to be relaxed, engaging, and rooted in sharing the joy of slow, hands-on food. She's also a regular volunteer in Wood St Plot to Plate Garden.
