This dish uses coconut oil and creamed coconut to make this light summery curry meal. Hotter weather calls for lighter cooking methods and a different preparation of vegetables. We will use seasonal vegetables like sweetcorn and fresh tomatoes that are only available for a short period of time. We will learn how to work with these produce to make their natural flavours come alive with simple but powerful seasoning.

You will learn the principles of listening to the weather to guide your summer cooking. In so doing, come join us for this fun and relaxing summer curry that is luxurious and creamy.


In this class, you will learn:

  • Distinct methods of cooking that work well in the summer.
  • How to pair vegetables with spices to work with their natural flavours
  • Different styles of cutting vegetables that work best for summer cooling.


About Monday Night Cooking

All our Monday Night Cooking classes are taught in a relaxed and fun environment, from our culinary school kitchen near Finsbury Park - just a stone’s throw from Seven Sisters Road. We want people to get into the kitchen, learn some tips & techniques, and experience the magic of whole food cooking at home. At the Concord School of Culinary Arts, we believe we are what we eat and that good culinary skills can make a big difference in our well-being and lives.

About your teacher.


Sarah has been participating at Concord Institute since 2009, initially in bodywork and then in the core curriculum of transformational work. She completed a 1-year cooking training with Jean Torne in 2015 - 2016 and has since catered for several programmes. She enjoys demystifying cooking and sharing ways to make nourishing/grounding dishes that feed our lives. She is also trained in massage, works in media and lives in South London with her flatmate and cat called Copper.

We have limited parking at our premises, you can park at the local Morrisons, or at the Sobell centre leisure centre.
